Erik's passion for representation of nature and the figure began at an early age. He received his formal training from the Rhode Island School of Design and later at the New York Academy of Art, and an annual apprenticeship in Wiscasset, Maine with his professor and friend, Seaver Leslie. He is known for his mastery of traditional painting techniques of the Hudson River School and Luminism, being one of the few young contemporary artists to exhibit alongside the masters of late 19th century.

His highly naturalistic paintings are created without the use of photography, but through studies en plein air and from memory. Koeppel has been the recipient of several honors and awards, has exhibited extensively throughout the US, with gallery representation including: Rehs Galleries, New York, New York, 2012-20; The Guild of Boston Artists, Massachusetts, 2015-20; and Bryan Memorial Gallery, Jeffersonville, Vermont, 2018-20.
